4 Must-Try Lemon Recipes

Lemon isn’t just for garnishing drinks and desserts. You can also make a variety of dishes like these four must-try recipes.

Lemon Pie

  • Ingredients: 1 cup sugar, 2 eggs, 4 egg yolks, 2 tablespoons lemon zest, ¾ cup lemon juice, 6 tablespoons cold unsalted butter, 1 tablespoons cornstarch, sweetened whipped cream
  • Crust Ingredients: 3 tablespoons sugar, ¼ teaspoon salt, 6 tablespoons melted unsalted butter, 50 Nilla wafers
  • Preparation: Preheat oven to 350° To create a crust, in a food processor, combine wafers, salt, sugar, and butter. Pour into a glass pie plate and bake for 10 to 12 minutes. To make the filling, whisk cornstarch and sugar in a saucepan, then add eggs, lemon juice, and egg yolks. Whisk constantly over medium heat for 7 to 9 minutes. Remove from heat before adding butter and lemon zest. Pour filling into crust, cool, then chill for at least 8 hours. Serve pie with whipped cream and lemon zest topping

Lemon Frittata

  • Ingredients: 1 Meyer lemon, 2 leeks, 1/3 cup Italian parsley, 3 ounces goat cheese, olive oil, salt, and ground black pepper

  • Preparation: Preheat broiler. In a bowl, whisk eggs and lemon zest, then crumble goat cheese. Heat oil in a skillet over medium heat and toss leeks. After ten minutes, stir in parsley. Cook until slightly wilted then remove from heat before seasoning. Let cool then pour leek mixture into the egg mixture. Heat the oil in the skillet again then cook the egg mixture for 10 to 15 minutes. Next, place frittata under the broiler for 3 to 5 minutes.

 Lemon Tart

  • Ingredients: ¼ cup lemon juice, 2 teaspoons grated lemon zest, 1 tablespoon flour, 2/3 cup buttermilk, 2 eggs, ½ cup granulated sugar, 2 tablespoons brown sugar, ½ recipe basic pie dough, 2 tablespoons melted unsalted butter, 1/8 teaspoon salt, and confectioner’s sugar
  • Preparation: Preheat oven to 350° Roll pie dough recipe on a floured surface then place in a tart pan (9 inches). Press and fold overhang and freeze for 15 minutes. Next, line the pan with parchment paper and fill with dried beans. On a rimmed baking sheet, bake for 30 to 35 minutes. Discard parchment and beans then bake for another 5 to 10 minutes.

Meanwhile, in a bowl, whisk flour, eggs, brown sugar, buttermilk, lemon zest, lemon juice, butter, granulated sugar, and salt. When combined, pour into the tart crust. Bake for 50 to 60 minutes. Cook for 2 hour before dusting with confectioner’s sugar. Remove tart ring before serving.

Lemon Crème Brulee

  • Ingredients: 2 teaspoons lemon extract, 5 egg yolks, ½ cup granulated sugar, and 2 cups heavy cream
  • Preparation: Preheat oven to 325°F. In a bowl, whisk egg yolks with sugar until combined. Stir in lemon extract and cream or fold them into the mixture. Divide into ramekins then arrange them in a baking dish filled with hot water. Bake for 45 minutes. Cool completely then sprinkle with sugar on top. Place them under the broiler until the sugar caramelizes before serving.
